Throughout the film, there is an undeniable tie between the characters and the “farm to table” concept. All dishes created at GUSTU were conceptualized with the same culinary philosophy pioneered by NOMA Co-founders Claus Meyer and Rene Redzepi, which specified that all dishes at the restaurant are to be created with ingredients that can only be found in the native country.
Much like the characters in the film, the ingredients come from the vast and diverse ecosystems in Bolivia.
In this particular poster, we see the creation of the GUSTU premier dish, “The Palmito”, which originates from the Amazonian Jungle of Bolivia, much like its creator Kenzo Hirose.
This particular moment in the film encapsulates the relationship between Kenzo and his father.
